At the Belvedere, chef Jan Kruse focuses on a cuisine that has its roots in the Baltic Sea - and consciously looks to the world. Open, honest and straightforward, he brings international flavours to the coast with his "Baltic Sea meets the world" concept, without drowning out the origin of the products. His signature: a subtle, often slightly sweet and acidic twist that gives dishes a clear contour and makes them lively at the same time. He doesn't cook for the sake of it, but for the moment: up-to-the-minute, precise, focussed on what really matters. The result is a menu that has the effect of a view - including a panoramic view of the Baltic Sea - and sends flavours on a journey without leaving home.

The story of great cuisine on Usedom has been told at the Belvedere for years with a sweeping view of the Baltic Sea. A new chapter begins in spring 2023: Jan Kruse takes over the kitchen of the Belvedere fine dining restaurant at Strandidyll Heringsdorf. Born on the Baltic Sea and raised on the island, he travelled the world as a young chef - and returned to bring what he had experienced back to where his roots lie. His "Baltic Sea meets the world" concept combines the character of the coast - with a subtle hint of sweetness and lively acidity - with flavours and techniques from international cuisines. Every evening here becomes a culinary vista: a menu that remains relevant to the day, a panorama that carries the moment - and enjoyment that lets you think far beyond the Baltic Sea.
